This unique brew is a blend of Chardonnay barrel-aged Saison, which was inoculated with Brettanomyces, and our house culture inoculated Foudre, in a 50-50 ratio
The beer was then aged on local whole-bunch Shiraz grapes and underwent further fermentation in the barrels, with a variety of yeasts and bacteria contributing to its complex flavor profile.
The result is a beer that offers a tannic red berry experience, with a spritzy, full-bodied, and funky character that sets it apart from traditional brews.
